Peanut Butter Power Balls

2 cups gluten free oats

½ cup shredded unsweetened coconut

1 scoop Vanilla protein powder (I use Orgain)

2 T ground flax seed

2T chia seeds

Pinch of salt

1 1/4 cup peanut butter (or any nut butter)

¼ cup honey

1-2 tsp vanilla extract

½-1 cup mix ins (mini chocolate chips, dried cranberries, raisins)

Place all dry ingredients in a blender and pulse until oatmeal is broken up a little. In a large mixing bowl add peanut butter, honey, vanilla. Stir until all incorporated. Add the dry ingredients from the blender and mix until all ingredients are blended and you are able to form balls that stick together. You may need to add 1-2 T of water if too dry. Add mix ins. Form into 1 inch balls. Store in an airtight container in the fridge up to one week but they probably won’t last that long.
