Pumpkin Chocolate Chip Muffins (gluten free)

 

I love pumpkin foods. I especially love pumpkin bread. I recently stopped eating gluten so I was super excited to try this recipe.

You guys. You are gonna want to try these. Gluten-Free Pumpkin Chocolate Chip muffins. Welcome to fall.

2 cups gluten free oats
1 cup puréed pumpkin
1/2 cup maple syrup
2 eggs
1/4 cup milk of choice
1 tsp baking soda
1 tsp pumpkin pie spice
1/2 cup chocolate chips

Put all ingredients in a food processor (I used my Ninja blender) and blend until smooth. Stir in chocolate chips. Divide batter evenly into lined muffin tin. Bake at 350 degrees for 15-18 minutes or until toothpick comes out clean. Cook completely on baking rack.
